Happy Hyacinth

20120302-074146.jpg I know Spring is near, when I start seeing a few buckets of hyacinth scattered about in the stalls at the Market. The blooms have such a distinctive look. I like how tight the flower begins, then over time, it explodes into a glorious blossom. I bought a few bunches of white, and displayed them in simple green drinking glasses about the shop. I like to leave the tall green spiky leaves in the vase initially. As the bell-shaped flowers start to unfold, I start pulling the leaves out. By the time the hyacinth is in full bloom, I will have removed most to all of leaves to allow the flowers to really take center stage, and the sweet hyacinth fragrance will be filling the air.
