For the simplest one pan side dish add whole small potatoes, cut carrots, chopped rosemary, finely diced garlic, extra virgin olive oil, salt & pepper to a skillet. Mix well. Add to a hot 400 degree oven. Move around all every 15 minutes. Test at 45 minutes for doneness of spuds. Might need another 15 depending on their size. Your home will smell divine. Your tummy will be happy.
