Cider Braised Chicken with Apples & Onions

Wine & Dine Wednesday an amazing meal that was made for us at Hawthorne by our niece Caitlin, who is a chef. I preface that as watching her put this intensely hearty meal together so beautifully was like watching an artist painting at a canvas. My intention was to actually cook the meal myself for visiting family. I had just asked her to assist, mainly because I had not seen her in awhile and just wanted to catch up. We started making the meal together but then I just stepped back, made sure our wine glasses stayed full, and was treated to a master class. This was a recipe I found on Food52. It actually is from an incredibly sweet bed & breakfast in the Hudson Valley, Catbird Cottage. My husband loves apple cider so I wanted to incorporate it into a meal while we were there. Braising the chicken in the cider is just plain awesome. We made mashed potatoes to go along with it, which I can’t recommend enough. They work perfectly with all the dreamy thyme infused juices this recipe creates. Enjoy! The image is the sheet pan of goodness coming out of the oven. I am writing this post at 5 in the morning and even at this early hour, I am wanting to have this meal all over again.
