The First Tomato Sandwich Of The Season

Ripe good sized tomatoes are just starting to show up in our neck of the woods in the PNW. Today was the day to have my first tomato sandwich of the season, and boy was it worth the wait. Forest Garden Farm so graciously set a few stellar tomatoes aside for us. I have had a fresh jar of Duke’s mayonnaise waiting just for this day. A generous amount of Jacobsen flake sea salt to really bring out the juices. A more than healthy amount of Duke’s slathered on a large size of toasted sourdough bread and I was off and running. These instantly take me back to my youth when I was training with a coach in Kentucky and would devour many of these a day. I find it most comforting how a taste of something can do just that.
