Julia’s Vinaigrette + My Twist

On this Wine & Dine Wednesday a true classic, Julia Child’s vinaigrette. I am pretty certain she was influenced by all of her years in France as this sings of many salads we have had there on our travels. So simple yet so perfect. I often swap out the red wine vinegar for rice wine vinegar, soaking the minced shallot in the vinegar to mellow them out. And then add the rest of the ingredients to the bowl those two are sitting in. Homemade vinaigrette is a love language to me.
