6 1/2 Minute Boiled Eggs

My friend Catherine sent me an IG post by Coco Larkin that was a 6 and a half minute egg breakfast. Watching the video, I was quite taken. Oh how I love my eggs! Made it right away and wanted to share on this Wine & Dine Wednesday post.
Boil a pot of water. Once boiling, carefully lower 2 eggs into the water. Set your timer for 6 1/2 minutes. While they cook, put a pat of butter in a bowl. Make your toast. Ready a bowl with ice and water, making an ice bath. When your timer goes off, take the eggs and add to the water bath for 30 seconds. Take out after that time and gently peel your eggs. Add them to the bowl with the butter. Take a knife & fork and cut up eggs. Add a generous amount of salt & pepper. The whites and the yokes will mix with the butter and create a silky scrumptiousness.
Enjoy with your toast and coffee or tea. I had my iced coffee at the ready! It is such a simple yet super tasty and satisfying meal. Enjoy!
