Tomato Sandwich Season Continues

Wine & Dine Thursday about my beloved tomato sandwiches I have been eating since I was a kid. Playing the junior tennis circuit I could eat an incredible number of these in one sitting. Now, two open faced will do, but they still thrill me to no end. TPS picked up a beautiful tomato at Met Market the other day that was sitting on the counter calling my name. Two slices of the beauty heavily salted (Jacobsen & Maldon our go-to) to help bring out the juices while I toasted two pieces of a Macrina ancient grains bread I am majorly loving at the moment. Then a big slather of Duke’s mayo on the warm toast. Add the tomato slice. Heaven. I usually have with a glass of a rosé, but yesterday sparkling water was the winner as I worked away at the dining table after lunch. It is not even officially Summer yet, and I have already had a few stellar tomato sandwiches. We picked up a glorious tomato at the Millbrook Farmers Market a few weeks ago from McEnroe Organic Farm that was out of this world. Cheers to the simplest of beyond satisfying lunches!
