A Simple Summery Lunch

20130720-080000.jpg The heat and humidity in New York this past week was pretty off the charts. It made cooking of any sort not really in the cards as turning on the oven or stove top was just not really appealing. That is when fresh assembled meals are quick, easy, and most appealing. Tomatoes are just looking so darn good right now. A few quick flicks of the knife and the tomatoes were cut up. A few good ample pinches of sea salt and a glug of extra virgin olive oil, done. A slice of Brie and a few nutty, seedy crackers and lunch was ready.

We arrived back to Seattle late last night to a wonderfully cool eve. I am listening to the seagulls sing as I type this. Home to me really is about being content, fulfilled and happy when you are there. Cheers to loving wherever you lay your head each night!
