Roasted Fall Vegetable Tart

Wine & Dine Wednesday is a recipe I did not make, but enjoyed immensely and had to share. Our sister in law Cheryl made this for us recently. She and her husband Walter, brother to Mister Sive, brought over Sunday supper of lamb and this glorious creation. It was so good! Could easily be a meal in itself, or with a fried egg on top or with a big salad and a baguette. Fab nestled up with a roast chicken, yum. Lots of options on this one. It is from a book called ‘The Complete Kitchen Garden’ which is about garden design along with seasonal recipes using the vegetables grown in the garden. For those of us who don’t have a garden, don’t despair, all of this is easily picked up at the grocery store or farmers market. The tapenade takes this vegetable tart to a whole different level. Crazy amounts of flavor throughout. Enjoy!
