With tomatoes so plentiful at the moment, we want to enjoy them every chance we can. Slice up a bunch adding them to a baking dish. Tear up basil leaves. Cut a few garlic cloves into pieces. Add both. Then top all with lots of extra virgin olive oil, salt & pepper. Mix. Put in 400 degree oven until tomatoes have given off lots of their precious juices. Mix with just cooked pasta for an incredibly easy supper. Or toast up a baguette and spread chèvre on it and top with tomato mixture for a tasty appetizer.
