For those gloriously thick asparagus that are abundant right now, take a vegetable peeler and take the often tough outer layer of the stalk off. Then slather them with your very best extra virgin olive oil along with a nice sprinkle of salt. Lay out on a sheet pan and cook in a hot 400 degree oven turning them every few minutes until roasted to your liking.
